Thanks for your comment. GF oats are gluten-free oats. The recipe will work with any kind of rolled oat, but most people suffering from oxalate toxicity also have to heal their gut function and removing gluten is an important component of that. Liquid Sweet Leaf stevia (plain or with flavorings like vanilla) is very low oxalate and will work fine in this recipe. We also recently found out that the Now brand Better Stevia powder is very low oxalate, so if you wanted to experiment with that it would also probably work. Let me know how they turn out!

I live in Norway, Europe and therefore I dont have access to the same brands as you in the States.( I can order stuff on Iherb and other sites that ship to Europe of course) Will eco oats do? I bet that fresh coconut milk was heavenly! I wouldn’t have had 15 ounces either because I would have drank most of it.

I’m glad you like the granola bars. The milk makes them quite different than a “normal” granola bar but I like them as convenient take-along snacks for my boys. And they really are easy for kids to make. Thanks for letting us know that it still works without some of the other ingredients! I love hearing how people tinker with recipes and come up with something new. We’ve never had them without the raisins, but we have left out the protein powder before and it worked just fine.

I wanted to let you know that I tried this recipe this weekend and like it! I omitted a few things like the protein powder and raisins (did not have on hand); and I made my own coconut milk from a coconut (scooped out the white stuff and put it in the blender with the coconut water from the coconut …. it was not quite 15 oz so I added a little regular milk to make up the difference). It was really easy to make and a great snack for me to have on hand this week.
