I love all your ideas for these, alas, I can’t do much summer gardening where I live…Alaska…We can’t even (safely) start planting after Memorial Day which is still several weeks away. And then we have only a couple of months growing season at best.

I have a question: I’m a coffee drinker, especially “Greek” style. Do you know any oxalate value on that by any chance? I think they say instant coffee is a no-no, but regular, brewed coffee has a medium oxalate content, 8 oz, that is.

Which made me a little confused when I came across info saying caffeine can actually help you ward off kidney stones…I guess they mean you should take No-Dose instead of drinking coffee.

I especially like them with egg salad and red pepper, low oxalate hummus with tomato and cilantro, cream cheese with raisins and red pepper, and tomato and basil with cream cheese. Of course anything you put on a cracker can be spread on a “cucumber cracker!” Never thought of frying them although I do like fried zucchini with a coconut flour or corn meal dusting. Yum! This is making me hungry for summer gardening!

Great idea! Hey, maybe if you fried cucumber in olive oil, using coconut flour or something else super inexpensive, it would make the cucumber slices more “cracker-like.”
