Thanks for your comment. Lemon peel is just barely considered high oxalate at 15.6 mg. oxalate per teaspoon. In this recipe, Karla chose to use 1/4 teaspoon lemon peel because flavor it adds to the recipe far outweighs the 4 mg. oxalate it adds. You can substitute a drop or two of lemon extract instead, which is low oxalate, if you’d like to lower the oxalate content a bit.

Also, not all fruit peels are high oxalate. Many fruits are low or medium oxalate when eaten with their peels, including apples, peaches, pears, tomatoes, grapes etc.
