Thanks for your kind words. I admit I don’t really use recipes for breakfast. We tend to eat a lot of scrambled eggs, bacon, and pork chops with low oxalate fruit. Sometimes we have cottage cheese or yogurt with fruit or a veggie omelette. If it needs to be quick, some cold sausage or bacon, plus the boys munch Rice Chex in the car. Occasionally I make a frittata. I’ll try to post a good frittata recipe in the next few weeks. Oh, I sometimes make egg muffins which are a nice on-the-go breakfast. I’ll try to get that recipe up soon, too.

I am going to fix this for myself and maybe have it like for lunch and dinner a couple days! Maybe my husband would eat the picky eater part even! I have empty nest syndrome now but I could fix this for my family when they come in for Christmas. Also I could fix this and have my best friend over some time for lunch or dinner.
