Cucumber “Crackers”

I just found a great low oxalate, low carbohydrate, gluten-free idea on the Disney Family food page.  Substitute thick-sliced cucumbers for crackers when making your favorite party sandwiches and snacks.  Cucumber “Crackers”can be topped with any low oxalate treat that you enjoy on a regular cracker.  For every day snacks and lunches try egg salad, ham, avocado, cream cheese with peach jam, “Texas caviar” (mashed lentils, peas, or black-eyed peas), turkey and Swiss cheese, or roasted garlic and red peppers. You may also enjoy a more elegant appetizer when entertaining, such as smoked salmon with goat cheese, or turkey with sun dried tomatoes and basil.

I especially like the idea of cucumber crackers because it allows families whose members follow different diets to eat similar foods, reducing the time busy parents spend in the kitchen and helping the low-oxalate dieter feel more “normal.” Yesterday at snack time I spread low-oxalate hummus on my thick-sliced cucumbers and topped each one with a sliced “sungold” cherry tomato.   Yum!  What a perfect summer treat.  The boys preferred to eat their hummus on crackers (Glutino crackers have only 3.7 mg. oxalate per 8 crackers), but Cameron likes cucumbers and ate a few of Mommy’s “special” snacks.  And Aidan was the one who carried the cucumber and tomatoes in from the garden, so even he tried a few bites.  Ahhh . . . parenting and dieting success in one swoop.  Thank you, Caroline Bates and Disney Family for this fabulous idea.

And yes . . . the low-oxalate hummus recipe is on it’s way.
